Amount Ingredients
300 mL butter
350 mL onions, small diced
300 mL flour, all-purpose
3 32/41 L water
140 gm Custom Culinary® Gold Label Clam Base
1 1/2 L chopped sea clams, canned
1 3/4 kg potatoes, medium diced
2 L half cream

  1. In a 16 Liter stock pot over medium high heat, melt butter. Sauté onions 2-3 minutes until onions are translucent.
  2. Add flour, blend completely, and cook 2-3 minutes stirring constantly.
  3. Add water and Gold Label Clam Base; blend thoroughly with a wire whip to eliminate lumps.
  4. Add clams and potatoes. Heat to boiling. Reduce heat and simmer 12-15 minutes until potatoes are just tender. (Do not overcook.)
  5. Finish with cream. Simmer 2-3 minutes.
  6. Flavor variations: - Maryland Style: Blend 10-20 ml Old Bay seasoning. Add 450 ml corn, 225 ml cooked diced bacon and additional seafood as desired. - Tuscan Style: Blend 120 ml prepared pesto. Add 450 ml diced tomatoes in juice and 450 ml grilled diced vegatables.
